If you have a local MTA, (which you do), you don't need to run POP3 at
all.  POP3 (Post Office Protocol) is intended for clients that want to
retrieve email from a remote MTA, not a local one.  You're correct,
dovecot does contain a POP3 server but it's way over the top for what
you're trying to achieve.

I wouldn't call myself an expert (or even an EXPERT[sic]) but in this
thread I've offered to assist you in setting it up.  I suspect you're
imagining it to be more complex than it really is.  Your current
configuration (using POP3) is actually quite complex in comparison.
